Variable Capacity Tank (CVT) also called floating lid wine tank or always full tank, is very popular for making small batch premium wine. It with sealing gasket makes liquid inside of the tank variable via adjusting lid height, avoiding possible oxidizing caused by half-tank of wine. 

Besides of winery, VCT is also used popularly in cider making.
